No Cake News Is Good Cake News

Not a lot to report today...we made cakes and curd and marzipan and ganache but I have nothing to show for it as we are decorating tomorrow...

For those of you who were waiting to hear about the genoise, it is not a simple cake to make. What you do is you warm/whisk eggs and sugar over boiling water till the sugar is dissolved and the mixture warm. Then you whisk (with a Kitchen Aid) on a high speed for literally 20 minutes till the mixture is cool, triple in volume and Super stiff. Then you very quickly fold sifted flour into the volume-y eggs. Though we have yet to taste the cake, our chef says that it is super bland and super boring unless you flavor it with some sort of glaze.

  1. I'm positive the glaze will be amazing - whatever sort it is... why am I up so late catching up on Katie's blog? Because I just watched the Late Show with David Letterman after having attended the live taping this afternoon here in Manhattan!!!

    Katie, keep those really tantalizing stories and photos coming from the city that never sleeps - it is really making for some interesting & inspirational reading.

  2. Unfortunately I did not stay awake long enough to watch the show on TV. But it was fun and exciting to be in the audience!

    We have been back home for a couple days and it appears that we are still recovering from all our adventures in the city that never sleeps. I am glad to have a morning off to catch up on things including this blog and my sleep.
