Two Ways To Ice A Cake

We learned a new way to ice cakes today. It was almost too easy. In fact, we were all quite upset with chef for teaching us how to frost cakes the hard way first...guess that's how you learn. Anyway, I took pictures so you could sort of get the picture. So, without further adieu, here is cake frosting method two in pictures:

First we took a metal ring and iced the inside of it with chocolate ganache.

Then we placed one (of three total) cake layers in the bottom of the ring, drenched it in a sugar syrup for moisture and flavor, and then put icing on top of it.

Then we continued with the other two layers and finished the cake by icing the top all the way up to the top of the ring. When that was done, we froze the cake.

In order to get the ring off the frozen cake, we used a blow torch to gently warm the sides.

Then we glazed the cake with ganache and decorated it. The finished product is uber rich but very tasty (if I was allowed by Blogger to post more pictures...I would! The inside is lovely).

  1. I am impressed about the ingenuity involved in this process of icing your cakes. It appears that you are learning many tricks of the trade.

All I can say is, if that cake tastes as good as it looks, WOW!!!
